Apple & Blueberry Slice


With big chunks of stewed apple and whole juicy blueberries, I don't know of one child that wouldn't open their lunchbox and jump up and down with delight at seeing this delicious snack.


When it was created, this recipe didn't even make it to the freezer in our house. It was eaten within 24 hours by both the adults and the kids!


Prep 20 min // Cook 23-30 min


INGREDIENTS

5 apples peeled, cored and chopped into chunks

½ punnet blueberries (or whatever you have to use)

1 ½ cups self raising flour

½ cup brown sugar

125g butter

1 egg

1 tsp cinnamon

¼ cup milk


THERMOMIX METHOD

  1. Preheat oven to 180 degrees, line a slice tray with baking powder and set aside.

  2. Fill a bowl with 800g of water, place apples in a basket, sprinkle over cinnamon and cook 14min/varoma/sp4.

  3. When cooked remove the basket, set aside and empty the water from the bowl.

  4. Add butter and sugar, and cook 2min/37deg/sp3 until it becomes a smooth caramel consistency.

  5. Add flour, egg and milk to the bowl and mix 6sec/sp4 then scrape down bowl.

  6. Add blueberries and apples and mix 10sec/sp4.

  7. Pour mix into the tin and cook for 25-30min, or until a skewer comes out clean.

  8. Cool completely and then slice.


Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees, line a slice tray with baking powder and set aside.

  2. Place apples in a saucepan, sprinkle over cinnamon, add 1tb water and cook on the stove until the apples are soft, then remove to cool.

  3. Add butter and sugar to the saucepan, and continue to stir over a low heat until a smooth caramel mix has formed.

  4. Add butter mixture to a bowl with egg, flour and milk then mix until well combined.

  5. Add blueberries and apples, and mix well.

  6. Pour mix into the tin and cook for 25-30min, or until a skewer comes out clean.

  7. Cool completely and then slice.
