Apple Quinoa Muffins


Quinoa is one food that I love to bake with because of the health benefits, and mixing it into muffins is the perfect way to give kids the added benefit while knowing it is something they will eat.


Prep 10 min // Cook 15-20 min


INGREDIENTS

1 cup self raising flour

2 tsp cinnamon

2 tsp mixed spice

1 cup cooked quinoa flakes

1/2 cup sultanas

1 cup milk

4 eggs

1 cup of stewed apples

1 tsp vanilla

1/3 cup diced strawberries


THERMOMIX METHOD

  1. Preheat oven to 180 degrees and lightly grease muffin tins and set aside.

  2. Cook quinoa flakes as per instructions and let cool.

  3. Peel, core and chop apple into 1cm pieces and place in a steaming basket. Fill bowl with 800g of water and cook 15min/varoma/sp4 and then set aside when soft.

  4. Empty water from the bowl and add all ingredients (except for the apple, sultanas and strawberries) and mix 10sec/sp4, scrape down sides and repeat until smooth.

  5. Add fruit and mix 10sec/reverse/sp4.

  6. Divide mixture into muffin tins and cook 15-20min.


Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees and lightly grease muffin tins and set aside.

  2. Cook quinoa flakes as per instructions and let cool.

  3. Peel, core and chop apple into 1cm pieces and place in a saucepan and put a dash of water in, then cook on the stove on low heat until soft and set aside.

  4. Place all ingredients (except apple, sultanas and strawberries) into a mix bowl and combine until smooth.

  5. Add fruit and gently combine through the batter.

  6. Divide mixture into muffin tins and cook 15-20min.
