Apple & Strawberry Slice

I hate food wastage, particularly at the moment when fruit is just hideously expensive following the recent natural disasters.


This week apparently eating whole apples "Isn't cool Mummy" so instead of wasting them I created this beautiful light and buttery slice and its been a HUGE hit in our house.


The apples with cinnamon, together with strawberries and sultanas, are the perfect recess snack for kids, and a great snack for me while I was in front of the computer at night!


Prep 30 min (including stewing time) // Cook 30-40 min


INGREDIENTS

4 apples peeled and cored and cut into 1cm pieces

2 cups self raising flour

1/2 cup raw sugar

125g butter

1 large egg

4 teaspoon cinnamon

1 tbs extra raw sugar

1/2 cup sultanas

1/2 cup strawberries cut into 4


THERMOMIX METHOD

  1. Preheat oven to 180 degrees and line slice tray with baking paper and set aside.

  2. Sprinkle 1 tsp cinnamon over the apples.

  3. Place 800g water in a bowl, then place apples in a steaming basket and cook for 15min /varoma/sp1. Set aside when cooked.

  4. Empty water from the bowl and place the butter in bowl and melt 3min/37 degrees/sp1.

  5. Add flour, sugar (not extra sugar), 2 tsp cinnamon and egg to the bowl and mix 10 sec/sp4 and scrape down sides.

  6. Add apple, strawberries and sultanas and mix 10sec/reverse/sp4.

  7. Pour mix into prepared slice tray and smooth out.

  8. Mix 1 tsp cinnamon and extra sugar together, then sprinkle it over the top of the mixture.

  9. Place in a preheated oven and cook for 30-40 min (depending on heat of your oven).

  10. When cooked, let it cool in the pan and then cut into squares.

Perfect snack for kids and adults

Non-THERMOMIX METHOD

  1. Preheat the oven to 180 degrees and line a slice tray with baking paper and set aside.

  2. Place apples in saucepan, sprinkle over 1 tsp cinnamon and add a dash of water. Cook over a low heat on the cook top until the apples are soft, then set aside.

  3. Place the butter in a microwave safe dish and melt at 30 sec intervals until its melted.

  4. Add sugar (not extra sugar), flour, butter, 2 tsp cinnamon and egg in a bowl and mix until they are well combined.

  5. Fold the sultanas, strawberries and apples into the mix and gently combine.

  6. Pour into a prepared slice tin and smooth.

  7. Combine 1 tsp cinnamon and the extra sugar, then sprinkle over the top of the mixture.

  8. Place in a preheated oven and cook for 30-40 min (depending on heat of your oven).

  9. When cooked, let it cool in the pan and then cut into squares.
