Apricot Balls



As we all know I am not a huge fan of bliss/protein balls and as a result I do not make them often. However, the twins must have a couple of friends at school who have them in their lunchbox and they requested some "balls" in their lunch.


I made these Apricot Balls but they did not make it to the freezer, so a second batch has now been made!


They are quick and easy (which is a HUGE plus for any busy parent), and a healthy snack addition to your lunchboxes.


Prep 10 min


INGREDIENTS

1 cup dried apricots

1 cup rolled oats

25g butter

1/2 cup shredded coconut

1/4 cup coconut cream


THERMOMIX METHOD

  1. Place butter in the bowl and melt 3min/37deg/sp2.

  2. Add all the remaining ingredients, mix 10sec/sp7 and scrape down sides.

  3. Repeat the mixing process until the mixture has combined well.

  4. Using a teaspoon, roll into teaspoon size balls.

  5. Chill in the fridge for 20 minutes.

  6. Divide into portions and freeze, or keep in the fridge for up to 3 - 4 days.

Non-THERMOMIX METHOD

  1. Place butter in a saucepan over a low heat, and stir until melted.

  2. Place butter and all the remaining ingredients into a food processor and blend until well combined.

  3. Using a teaspoon roll into teaspoon size balls.

  4. Chill in the fridge for 20 minutes.

  5. Divide into portions and freeze, or keep in the fridge for up to 3 - 4 days.
