Awesome Apple Cake


I lived in Ireland when I was in my 20's and apple cake and tarts were very popular. One particular shop had an amazing apple cake because the apples were not stewed. This recipe is based on my memory of this cake.


The chunks of apple and the delicate hint of cinnamon and all spice, combined with a buttery batter makes for the perfect snack for a lunchbox or to share with friends over a cup of tea.


Prep 10 min // Cook 60 min


INGREDIENTS

250g plain flour

1 tsp baking powder

80g sugar

125g butter

3-4 apples peeled, cored and roughly chopped

1 egg lightly beaten

1 tbsp ground cinnamon

1 tsp all spice

1/3 cup milk

Cinnamon sugar to sprinkle on top (optional)


THERMOMIX METHOD

  1. Preheat oven to 180 degrees and grease a round cake tin and line with baking paper and set aside.

  2. Place flour, baking powder, sugar, cinnamon and all spice into a bowl and mix 4sec/sp4 and scrape down sides.

  3. Roughly chop the butter into pieces and place in the bowl.

  4. Add egg and milk and mix 4sec/sp4 scrape down sides.

  5. Add apple and mix 7sec/REVERSE/ sp 4. The batter at this stage is meant to be dense and lumpy!.

  6. Pour the mixture into a prepared tin and if using cinnamon sugar sprinkle it on top.

  7. Bake for approx. 60 minutes.

Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees and grease a round cake tin and line with baking paper and set aside.

  2. Place flour, baking powder, sugar, cinnamon and all spice into a bowl and mix throughly.

  3. Roughly chop the butter into pieces and place in the bowl.

  4. Add apples and stir in milk and eggs. The batter should be lumpy and dense).

  5. Add egg and milk and mix scrape down sides.

  6. Pour the mixture into a prepared tin and if using cinnamon sugar sprinkle it on top.

  7. Bake for approx. 60 minutes.
