Banging Sausage Cups

I do not know many families who do not have leftover sausages at the end of a meal. If you are like me, you try to find ways to use them as leftovers, but I always seem to end up feeding them to the dog.

The twins had traditional "bangers and mash" the other night as we ate a spicy curry they would not eat. As usual, I had plenty of sausages, vegetables and gravy leftover and I decided to put them to good use and made sausage cups.

The twins have had them for lunch and afternoon tea this week. They think they are totally cool, and have decided to name them "Taco Sausage" as the cup is made from wraps.

A quick easy 10 minutes in the oven and you have transformed dinner - and made a tasty and different lunch for the kids the next day!

Freezer friendly, just heat them up in the oven (or an air fryer) in the morning, place a piece of paper towel in the thermos and they will be nice and warm for lunch!

3 sausages (or as many as you have leftover) cut thinly into slices

1/4 cup of gravy

Broccoli (enough florets for each cup)

Carrot diced

Corn kernels

1/4 cup grated cheese

4 wraps


Preheat the oven to 180 degrees, grease a muffin tin and set aside.

Mix sausage, gravy, broccoli, carrot and corn in a bowl and set aside.

Cut rounds from the wraps to fit into the muffin tin (I made 3 rounds per wrap).

Gently mould the wraps into the prepared muffin tin so you create a "cup".

Spoon the sausage and gravy mix into each "cup" then top with grated cheese.

Cook for 10 minutes then cool on a wire rack.
