Basic Muffin Recipe - 3 Ways

To make as a sweet muffin include the sugar. (Omit sugar for Savoury Muffins).


INGREDIENTS

2 cups self-raising flour

¼ cup caster sugar

2 cup milk

2 egg lighten beaten

75g butter


METHOD

  1. Preheat oven to 180deg.

  2. Place muffin cases in muffin tins.

  3. Add butter to bowl and melt 1min/50deg/sp2.

  4. Add remaining ingredients and mix 10sec/sp4 scrape down bowl and repeat 5sec/sp4.

  5. Divide mixture between muffin cases and then press into each case your chosen. topping (list below).

  6. Place in oven and cook for 20min or until skewer inserted comes out clean.


SWEET TOPPING IDEAS

  1. Mixed berry.

  2. Blueberry and coconut.

  3. Mango puree.

  4. Strawberry coulis.

  5. Diced banana, carob nib or choc chip and honey (omit the sugar if using this).

  6. Oats and apple puree.

  7. Chopped pear and white choc chip.

  8. Lemon and chia seeds.

  9. Orange and poppy seeds.

  10. Sultanas.

  11. Apple and cinnamon.


SAVOURY

  1. Mashed pumpkin.

  2. Tomato and creamed corn.

  3. Mashed sweet potato and carrot.

  4. Ham and cheese.

  5. Carrot, zucchini and ham.

  6. Bacon and spinach.

  7. Spinach and ricotta cheese.

  8. Spinach, ham and feta cheese.

  9. Cheese and corn.

  10. Broccoli and cheese.

  11. Cauliflower and cheese.
