Basil Pesto


Who else walks through a supermarket, a fresh produce store or a farmer's market and gets a waft of a beautiful smell and thinks "I have to buy and cook with that item"?


Perhaps I am odd, but the other day I walked through a fresh produce store and all I could smell was fresh basil. The fragrance was so inviting that I went home and immediately made up this beautiful pesto for our family meal that night. One taste of homemade pesto and you will never buy a jar of it again!

INGREDIENTS

6 cloves garlic

1/3 cup pine nuts

2 cups fresh basil

½ cup olive oil

1 cup Parmesan cheese cubed

Salt and pepper to taste


THERMOMIX METHOD

  1. Place the cheese in the bowl, chop 5sec/sp7 and set aside.

  2. Place the garlic and pine nuts in the bowl, turbo 2-3 times and scrape down the sides.

  3. Add basil, turbo 1-2 times, then scrape down the bowl.

  4. Slowly drizzle the olive oil through the MC opening with the blade on at sp3 until blended.

  5. Add the reserved cheese, and salt and pepper to taste then blend 10sec/sp5.

Non-THERMOMIX METHOD

  1. Place the cheese in a food processor, grind until it is processed and set aside.

  2. Place the garlic and pine nuts into the processor and pulse until finely chopped.

  3. Add basil and pulse 2-3 times until it is processed finely.

  4. With the processor running slowly,rizzle in the olive oil until its blended through.

  5. Add reserved Parmesan cheese, and season with salt and pepper then process for 10 seconds.
