Carrot, Apple & Date Loaf



Welcome to the world of Corona virus where everyday staples such as pasta, rice, flour and other non perishable goods are scarce and obtaining a roll of toilet paper is like winning the lottery!


This week we set about experimenting with some recipes that could be made without pantry staples and tried and true recipes using pantry staples and other items that you will still find on the shelves (aka dates & sultanas).


In the Corona world we may at times need some creative thinking when the usual cake mix, packaged food is not on the shelf, but recipes like this are not only easy to make and delicious, chances are they are more healthy than the packaged item you usually buy or the cake mix on the shelf.


Anyhow back to my loaf. The dates and sultanas give it a sweetness that means you can use less sugar or no sugar at all if it is not on the shelf. You can interchange the butter with vegetable oil or vice versa depending on what is on offer that day at the supermarket and the flour do not be afraid to use wholemeal self raising flour as the result will be the same or alternatively use plain flour and 2 teaspoon of baking powder.


The cake is light and moist and sweet, perfect heated up with some butter, or if you have some cream cheese and want to impress some friends whip that baby up and create a cream cheese frosting.


My twins are loving these mini loaves in their school lunches this week and the best part of all they do not know there is carrot in there at all!


Prep 10min // Cook 50 min (if making one cake - 20-25 min for mini loaves)


INGREDIENTS

2 carrots

2 apples peeled

1 cup dates

1/2 cup sultanas

1/2 cup butter

2 cups self raising flour

1/2 cup boiling water

1 tsp bi-carbonate soda

1/2 cup brown sugar

2 eggs

2 tsp ground cinnamon

2 tsp ground nutmeg


Thermomix method

  1. Preheat oven to 180 degrees and lightly grease mini loaf tin or one large loaf tin and set aside.

  2. Place butter in the bowl and melt 4min/37deg/sp2 and then set aside.

  3. Roughly chop the carrots and core the apple and place in bowl and chop 5sec/sp6 and then set aside.

  4. Place dates in bowl and add bicarbonate soda and boiling water and let sit for 10 min.

  5. Add eggs and melted butter and mix 10sec/sp4/and scrape down sides.

  6. Add flour, sugar, cinnamon and nutmeg to the bowl and mix 10sec/sp4 and scrape down sides.

  7. Add carrot, apple and sultanas to the bowl and mix 10sec/sp4 and scrape down sides.

  8. Pour into prepared tin(s) and place in oven and bake until cooked through.

  9. Remove from the oven and let sit in tin for 10min before turning out onto a cooling rack.

Non Thermomix Method

  1. Preheat oven to 180 degrees and lightly grease mini loaf tin or one large loaf tin and set aside.

  2. Coarsely chop the dates and add to a bowl and pour over the boiling water and bicarbonate soda and let sit for 10min.

  3. While waiting for the dates grate the carrot and apple and set aside.

  4. Melt butter in the microwave for 40sec.

  5. When the date mixture is ready add the eggs and butter and whisk well to combine.

  6. Add all remaining ingredients to the bowl and mix until well combined.

  7. Pour into prepared tin(s) and place in oven and bake until cooked through.

  8. Remove from the oven and let sit in tin for 10min before turning out onto a cooling rack.
