Cheesy Pasta

The best family meal is one that is:
1. Quick;
2. Cost effective; and
3. Something even the fussiest kids will eat and ask for again!
This cheesy pasta ticks all the above boxes and can I tell you it is the absolute comfort meal on a cold winters night!
It's so simple that you throw it the pot, stir it a couple of times and then dinner is served!

INGREDIENTS
1 tablespoon olive oil
1 onion diced
4 cloves garlic crushed
500g lean beef mince
1 tin tomatoes
¼ cup tomato paste
2 cups beef stock
1 tbs EDMK Italian Spice Mix
1/2 tbs Worcestershire sauce
2 tbs BBQ sauce
1 carrot diced
1 celery stalk diced
3 cups dry penne pasta
½ cup grated cheese
½ cup grated Parmesan cheese
Salt and pepper to season
METHOD
Dice all your vegetables finely.
Heat oil in a pan then add the vegetables and garlic, and sauté for 2 minutes.
Add beef mince and cook until browned.
Add tin tomatoes, tomato paste, stock, EDMK Italian Herb Mix, Worcestershire sauce and BBQ sauce and combine.
Reduce heat to low, then add the pasta and season with salt and peppe. Cook for approximately 15 minutes, or until the pasta is cooked (add more stock if needed).
Check the seasoning and add more salt and pepper if needed. Add both cheeses and let it melt through the pasta.
Serve hot with garlic or crusty bread.
Note: This is a perfect meal to hide lots of vegetables for fussy eaters.
Omit the pasta and you have an "Aussie" version of the American favourite Sloppy Joes!
