Who doesn't like tuna and cheese? It's an amazingly quick combination, and these pies are DELISH! This recipe is perfect for the school lunchbox, or as a quick and easy weekend lunch for the family.
Prep 10 min // Cook 10 min (I used an air fryer, oven cooking would be approx 20 min)
1 tin tuna in spring water drained
1 tin corn drained
1/2 red capsicum diced
2 spring onions diced
1/2 cup grated cheese (Plus extra cheese to top the pastry)
1 portion of cheese sauce (I use a traditional cheese sauce, but store bought is fine)
Salt and pepper to taste
4 sheets puff pastry
1 egg lightly whisked
Place tuna, corn, capsicum, spring onions and cheese in bowl and mix well.
Mix through the cheese sauce - the amount needed depends how creamy you want it to be. I used about a cup.
Season with salt and pepper and set aside.
Cut puff pastry into 4 squares.
Diagonally place some tuna mixture across pastry square and fold over into a triangle. Secure the ends with a fork to encase. Repeat until there is no mixture left.
Brush the top of the pastry with egg, then sprinkle the extra grated cheese on top.
Cook until golden and either serve hot, or use cold for school lunchboxes.
