Chewy Museli Bar Slice



I grew up with Uncle Toby's chewy museli bars as a regular in my lunchbox, so I thought I would try and re-create something from home that had less sugar and preservatives in it for the twins.


It's a sticky, gooey mixture that makes it the perfect time for your kids to help you in the kitchen and get their hands messy!


Prep 10 min // Cook 20 min


INGREDIENTS

2 cups rolled oats

1 cup puffed rice

1/2 cup desiccated coconut

1/2 tsp cinnamon

1/4 cup LSA mix (Ground linseeds, sunflower seeds and almonds)

1/4 cup honey

1 tsp vanilla

1/3 cup bown sugar

1/3 cup sultanas

1/4 cup chocolate chips or carob nibs


THERMOMIX METHOD

  1. Preheat oven to 180 degrees and line a slice tray with baking paper.

  2. Add all the ingredients into a bowl except sultanas and choc chips, and mix 10sec/sp5. Scrape down and repeat.

  3. Add sultanas and choc chips and mix 10sec/sp5/reverse.

  4. Pour mix into the slice tray, smooth over the tray and flatten down.

  5. Bake until the slice is set. Note - Do not attempt to over cook as it will continue to set once cool.

  6. Wait until completely cool then cut into bars or squares. (This slice can also be frozen).

Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees and line a slice tray with baking paper.

  2. Add all the ingredients into a bowl and mix well until combined.

  3. Pour mix into the slice tray, smooth over the tray and flatten down.

  4. Bake until the slice is set. Note - Do not attempt to over cook as it will continue to set once cool.

  5. Wait until completely cool then cut into bars or squares. (This slice can also be frozen).
