Chicken Maryland


If you cant find Marylands chicken thigh cutlets with the bone in would work for this recipe

INGREDIENTS

6 Chicken Marylands

1 tablespoon olive oil

1 orange juice and zest

4 cloves garlic

Salt and pepper to season

Butter

125g butter

4 cloves garlic crushed

2 tsb orange zest

2 tablespoon fresh chives

1 tablespoon fresh continental parsley

1 tablespoon fresh thyme


THERMOMIX METHOD

  1. Place orange quartered into bowl and chop 5 sec/sp8, scrape down sides and pour into a bowl.

  2. Place garlic in bowl and chop 3 sec/sp 8 and put in bowl with orange. Season with salt and pepper.

  3. Marinate the chicken in the orange and garlic for at least 2 hours (overnight is best).

  4. Butter.

  5. Without cleaning the bowl place garlic, orange zest and herbs into into the bowl and chop 3 sec/sp 8 and scrape down sides.

  6. Add chopped butter and process 15 sec/sp4 until smooth.

  7. Remove butter from bowl. Place half the butter in a bowl and reserve. Shape the remaining butter like a log and put in the fridge.

  8. Preheat the oven or hooded BBQ to 190 degrees.

  9. Remove the chicken from the marinade and gently separate skin from the meat and rub the reserved butter mixture under skin of each Maryland.

  10. Place in a tray and pour marinade over the top.

  11. Bake in oven for approximately 45 minutes until chicken is cooked basting with the marinade in the pan every 15min.

  12. Place chicken on a platter, cut the butter log into pieces and place over the hot chicken to melt and garnish with chives and parsley.


Non-THERMOMIX METHOD

  1. Juice the orange and grate the rind into a bowl.

  2. Crush garlic and add to orange bowl and marinate the chicken.

  3. Butter.

  4. Crush garlic cloves and finely chop all herbs and rind and place in the bowl. Place chopped butter into the bowl and either beat by hand or in a food processor until smooth. Place half the butter mix into a bowl and set aside, and roll the remaining into a log and place in the fridge for later. Preheat oven or hooded BBQ to 190 degrees.

  5. Remove chicken from marinade and gently separate the skin from the meat and rub the reserved butter mixture under skin of each Maryland.

  6. Place in a tray and pour marinade over the top.

  7. Bake in the oven for approximately 45 minutes until the chicken is cooked basting with the marinade in the pan every 15 min.
