Chicken Noodle Stir Fry

Noodle dishes are an important dish for Chinese New Year. A traditional longevity noodle dish is often served, however my family loves this stir fry and we will be serving this at our New Year Celebrations
Prep 10 min // Cook 15 min
INGREDIENTS
500g chicken breast cut into one inch pieces
1 tbs corn flour
½ tbs salt
2 tbs vegetable oil
STIR FRY
2 tbs vegetable oil
100g dried rice noodles
2 cloves garlic finely chopped
2 inch piece of fresh ginger finely chopped
1 onion diced
Asian greens of choice
½ red capsicum diced
1 handful of coriander finely diced
STIR FRY SAUCE
4 tbs hoisin sauce
1 tbs soy sauce
1 tbs Chinese cooking wine
3 tbs water
METHOD
Cook noodles according to packet until al dente. Drain and set aside.
Mix all stir fry sauce ingredients in a bowl and set aside.
Pat chicken dry and toss in the corn flour and salt and let sit while oil heats up.
Heat oil from chicken ingredients in wok and when hot add chicken in batches and cook 2 minutes either side and then remove and set aside.
Heat stir fry vegetable oil in wok and when hot add ginger, onion and garlic and stir fry for two minutes.
Add capsicum and continue to stir fry for 3 minutes.
Add sauce, Asian greens and noodles to wok and toss through.
Finally add chicken back to wok and toss through and serve immediately.
