When I was shopping last week I bought a ready-cooked roast chicken which is something I rarely do. We had a busy week in our home and I needed to make sure we had enough lunchbox items and snacks for the twins for the week.
I was surprised that one roast chicken could make so many lunchbox items! I had promised the twins pizza during the week and to keep true to my word, I made these quick and easy chicken pizza cups. They are absolutely perfect for school lunches, but what I loved even more was they were less messy for little hands when we had a pizza and movie night on Friday night.

1 cup roast chicken diced
1/4 cup pizza sauce
1 tbs garlic powder
1 tbs mixed herbs
2 spring onions diced
3 tbs diced mushrooms
3 tbs diced capsicum
1/4 cup grated cheese + 1/4 cup extra cheese
3-4 wraps (the size of your muffin tins will determine how many wraps you will need)
Heat the oven to 180 degrees and grease a large muffin tin.
Cut rounds out from the wraps to fit your muffin tins and gently mould them into the tins to form a cup.
In a bowl mix all the remaining ingredients together (except the extra cheese).
Place spoonfuls of the mixture into the wrap cups.
Top up each cup with the extra cheese, place in oven and cook for 10 minutes.
Remove carefully from the muffin tin and serve hot.
