Eme has decided for an unknown reason that she LOVES pies. I am not sure where this love affair has come from because I don't make pies very often.
I was skeptical that the twins would eat these cold at school, but they both came back with empty lunchboxes and declared "They are the best thing ever Mummy!" and the extra stockpile I had in the freezer have now been eaten as well.
This recipe is something a little different to try for lunches and best of all, it uses up any leftover chicken ragu you have from dinner!
Prep 5 min // Cook 10 min (I used an air fryer, the oven would take 20 minutes)
Portion of leftover cold chicken ragu (See our All Recipes page)
2 sheets of puff pastry
1/2 cup grated cheese
1 egg lightly beaten
Cut puff pastry into 4 squares.
Put a portion of chicken ragu diagonally over the puff pastry and place a small portion of grated cheese over the top. Repeat for each square.
Fold over to make a triangle and press a fork along the edges to secure the pastry.
Brush the top of the pastry with egg and lightly sprinkle grated cheese over the top.
Cook until golden and serve straight away or eat cold for lunchboxes.
