Chicken & Vegetable Burgers


My twins have burger bliss. They love all kinds of burgers and I love to make them because they are so versatile in a school lunchbox.


These chicken burgers are totally the BOMB! Besides the flavour combination, they are the Houdini of hidden vegetables that even the fussiest eater will not spot!

INGREDIENTS

500g chicken mince

1 carrot

2 spring onions

1/2 red capsicum

Handful spinach leaves

1/2 zucchini

3 tbs of fresh mixed herbs (I used oregano, continental parsley, coriander and rosemary)

3 cloves garlic

Salt and pepper to taste

1 tbs vegetable stock paste or 1 stock cube.


THERMOMIX METHOD

  1. Preheat oven to 180 degrees. Lightly spray a baking tray and set aside.

  2. Roughly chop carrot, spring onions and place in a bowl with garlic and chop 3sec/sp8 scrape down sides.

  3. Add capsicum, zucchini and spinach leaves and chop 3sec/sp5 scrape down sides.

  4. Add chicken mince, spinach, herbs and stock paste or cube, salt and pepper to taste and mix 6sec/sp6, scrape down sides and repeat until combined.

  5. Roll into mini burgers (I used approx 1 tbs mixture per burger).

  6. Place on the baking tray and cook for 18 min turning once or twice during cooking.


Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees. Lightly spray a baking tray and set aside.

  2. Grate zucchini and carrot and place in bowl.

  3. Finely chop spring onion, capsicum and herbs and add to bowl.

  4. Crush garlic and add to the bowl with the remaining ingredients and season with salt and pepper.

  5. Combine the ingredients well.

  6. Shape into mini burgers (1 tbs approx of mix per burger).

  7. Place on the baking tray and cook for 18 min turning once or twice during cooking.


Note: I use the burgers in our lunchboxes in a number of ways - in a wrap with salad, as a mini slider, on their own with sauces and food picks, as a morning tea snack, or in a roll as a sub, they are just a few suggestions.
