Cold Prawn Platter (with Cocktail Sauce & Mango Salsa)

INGREDIENTS

1kg cold cooked prawns

Lettuce for platter garnish

Cocktail sauce (recipe below)

Mango Salsa (recipe below)

Lemon wedges to garnish


METHOD

  1. Arrange lettuce leaves over platter as garnish.

  2. Place prawns around bowl of cocktail sauce and place lemon wedges over the top.

  3. Place cocktail sauce on platter and serve immediately.

  4. Place mango salsa on platter.


Cocktail Sauce Recipe


INGREDIENTS

300g mayonnaise (I use my homemade mayo for this recipe)

4 tablespoon of tomato sauce (I use my homemade sauce for this recipe)

2 tablespoon lemon juice

1 teaspoon Worcestershire sauce

2 teaspoon horseradish cream

Salt and pepper to taste

Few drops of tabasco sauce


Non-THERMOMIX METHOD

Mix all ingredients together and serve cold.


THERMOMIX METHOD

Place all ingredients in bowl and mix for 8 seconds at speed 4, and place into bowl.



Mango Salsa


INGREDIENTS

1 ripe mango finely chopped

½ red onion diced finely

Fresh coriander finely diced

1 lime (zest and juice)

Dash of olive oil

2 cloves garlic crushed

1-2 long red chilli finely diced

Small knob of ginger diced finely

Salt and pepper to taste


Non-THERMOMIX METHOD

Mix all ingredients together in a bowl and serve cold.


Non-THERMOMIX METHOD

  1. Dice mango by hand.

  2. Place onion, chilli, ginger, coriander and garlic in bowl and chop 3 seconds speed 5.

  3. Place lime juice and zest, salt and pepper and diced mango into bow and mix 6 seconds/speed2/reverse.

  4. Place in bowl and drizzle over olive oil.
