A special kind of magic is created when you mix a humble chicken breast with this herb mix.
Teamed with a beautiful creamy sauce that is infused with the herb mix, the end result is a quick family meal that can also be showcased at your next party.

2 x chicken breasts cut length ways to create four even chicken breast fillets
2 tbs EDMK Chicken Spice Mix
1 tb olive oil
2 tbs butter
6 cloves garlic crushed
1 tbs fresh continental parsley diced
1 tbs fresh thyme diced
1 tbs fresh rosemary diced
1 cup sliced mushrooms
1 cup cooking cream
Salt and pepper to season
1/4 cup white wine
¼ cup liquid chicken stock
3 potatoes thinly sliced (make sure you cut thinly so that they cook through)
1 onion diced
Rub oil over the chicken breast and then rub in the EDMK Chicken Spice Mix over both sides of the chicken breast.
Heat the butter in a pan and when it has started to go brown, sear the chicken breasts for 2 minutes on each side, then set aside on a plate and cover to keep warm.
Add potatoes, garlic, and herbs to the pan and cook on one side for 3 minutes and then turn and cook for a further 3 minutes on other side.
Add mushrooms, cream, wine and chicken stock and stir for approximately 5 minutes until the sauce has reduced. Season with salt and pepper.
Add the chicken back to the pan and coat with the sauce, then turn down to heat to a low simmer and cook until chicken is cooked through.
Serve immediately with steamed vegetables.
