"Danish" Lunchbox

If your kids are anything like mine, they LOVE variety in their lunchbox. I always try and make sure their lunch part of their lunchbox is different each day and rotate what we have.
Sandwiches are not always successful in our lunchbox and they tend to prefer wraps and rolls. Like every house, by the end of the week our fridge becomes pretty bare and I have to be creative.
Puff pastry is an amazing ingredient to always have in your freezer, and the possibilities are endless. One square of puff pastry, pizza sauce, ham, pineapple and cheese and the kids went happily off to school with a "Pizza Danish" as they called it.

Since that day when I went "Oh gosh, what will I use?" We have used the same method with frozen berries and had a danish for morning tea and a sneaky weekend treat where I filled them with strawberries, white chocolate and milk chocolate.
I cook them in 5 - 8 minutes in the air fryer, but they will work just as well in the oven - and best of all, they are freezer friendly!

INGREDIENTS
Puff pastry
Your fillings of choice
METHOD
Cut the puff pastry into 4 even squares.
Place the pastry into a diamond shape and put your fillings lengthwise in the middle.
Fold over each edge into the middle and place in the air fryer. Bake until the pastry has "puffed" and is brown.
