Granola Cookies

Our last au pair enjoyed having granola for breakfast. Unfortunately our family are not big cereal eaters, so when she left I was left with boxes of granola and no one eating them! This is possibly the easiest and quickest cookie recipe that I use. It is so simple, that kids of all ages can make their own lunchbox snack with only some supervision needed for the oven.
A word of warning, do not be tempted to make the cookies to big! It's quite a crumbly mixture so the bigger the cookies, the harder the harder they are to manage.
... and a final word, do not omit the step in the fridge at the end!

INGREDIENTS
2 cups of granola
½ cup dried mixed fruit
1/4 cup plain yogurt
4 tbs honey
METHOD
Preheat the oven to 180 degrees, line a baking tray with paper and set aside.
Mix all the ingredients together in a large bowl until well combined.
Place one tbs of mixture at a time on the baking paper and gently flatten.
Place in the oven and cook for approximately 15 minutes.
Place on a rack and then transfer to the fridge for a further 30 minutes. (This recipe is suitable for freezing).
