Ham, Feta & Spinach Loaves


This quick and easy recipe is a great way to be a little creative in lunchboxes, particularly for those kids, who (like mine) love ham.


Prep 10 min // Cook 30 min


INGREDIENTS

5 slices leg ham finely diced

2 spring onions

½ cup spinach leaves

½ tsp dried oregano

1 cup self raising flour

1 egg

1 cup milk

75g butter

100g feta


THERMOMIX METHOD

  1. Preheat oven to 180 degrees, lightly grease a mini loaf or large muffin tin and set aside.

  2. Place butter in the bowl and melt 3min/37deg/sp3.

  3. Add egg and milk, then mix 10sec/sp and scrape down sides.

  4. Add flour, spinach leaves, spring onion and oregano to bowl and mix 10sec/sp4 then scrape down sides.

  5. Add ham and crumble feta into the bowl and mix 4 sec/sp4 then scrape down sides.

  6. Pour into the prepared tin and bake for 30-35min or until cooked through and golden.

Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees, lightly grease a mini loaf or large muffin tin and set aside.

  2. In a saucepan melt butter over a low heat.

  3. Dice spinach leaves and spring onion and set aside.

  4. Whisk together egg and milk in a mix bowl, then add butter and mix until well combined.

  5. Add flour, oregano, spring onion, spinach and mix well.

  6. Crumble feta cheese into the mix, then add diced ham and gently combine.

  7. Pour into the prepared tin and bake 30-35min or until cooked through and golden.
