One pan and delicious ingredients is my favourite way to cook a meal, and it makes for a happy family and a happy Mummy with little mess to clean up!
This chicken tastes so good you would think you had slaved over the stove forever, but really it's quick and easy. The whole family will love the sweetness of the lemon and honey - and the tender chicken.
My favourite way to serve a meal like this is with creamy mash potato to soak up all the beautiful thick sauce. If you are not a mash potato fan, rice or pasta is also the perfect side to this meal.

1kg chicken thigh fillets
6 cloves garlic minced
1 lemon juiced and zest
1 lemon sliced
3 tbs honey
1 cup chicken stock
Salt and pepper to taste
1 tbs olive oil
2 tbs butter
Season the chicken well with salt and pepper.
Add oil and butter to a pan and when hot, sear the chicken on both sides until brown then set aside.
Add garlic to the pan and sauté for one minute.
Add the remaining ingredients and bring to the boil, then let it reduce and thicken slightly.
Add the chicken back into the pan, replace the lid and simmer gently until cooked through.
When the chicken is cooked, remove from the pan and cover with foil.
Thicken the sauce by whisking it over a high heat.
Serve the chicken with your preferred sides and drizzle the sauce over the top.
