Hot Cross Buns

We are that family that people hate. You know, the ones waiting until the 27th December when Hot Cross Buns are on the shelf in the supermarket. My family would eat them all year round if they could.


Sadly, store bought ones with hidden preservatives and additives don’t agree with one of our twins so I made this recipe to mimic the store bought ones and presto, Hot Cross Buns all year round!


The downside is they do take time and this is one of the times you may love your Thermomix a little more if you have one, but the end result is worth it.

Those without one don’t fret, the kneading is good to get out any stress in your life, and kids love kneading and handling dough, so it’s a perfect activity to do as a family.

INGREDIENTS Buns

3 tsp dry yeast + 1 tsp raw sugar

620g bakers flour

70g raw sugar

380g milk

1 ½ tsp salt

2 tsp all spice

2 tsp cinnamon

2 tsp nutmeg

60g butter

1 egg

190g sultanas


Cross

½ cup flour

5 tbs water


THERMOMIX METHOD

  1. Add flour, spices, sugar, butter into bowl and mix 6sec/sp7, then set aside.

  2. Add milk to the bowl and heat 3min/37deg/sp1, add dry yeast + tsp sugar and wait for it to froth.

  3. Add flour mix and egg and mix 20sec/sp5.

  4. Place a bowl on top of the Thermomix, weigh sultanas and set aside.

  5. Knead for 3 minutes and slowly incorporate the sultanas in as you knead.

  6. Set dough aside and let it double in size. When doubled in size “knock” down and hand knead for 4-5min. You can use the Thermomix to knead again, however you will get a better result hand kneading.

  7. Divide dough into 20 balls and place them close to each other on a grease proof paper in baking tray, then proof again until they double in size.

  8. Preheat the oven to 200 degrees.

  9. While proofing the second time, place cross ingredients into a bowl and mix well and place into a piping bag. When the dough is doubled in size, pipe a cross over top of the dough.

  10. Bake for 20 minutes until golden brown.

Non-THERMOMIX METHOD

  1. Sift flour, spices, sugar into a bowl and rub through the butter.

  2. In a saucepan heat the milk until warm and take off the heat then add yeast and 1 tsp sugar.

  3. When it has frothed, add it to the flour and butter mix with the egg, and mix well.

  4. Add in the sultanas and knead for 10 minutes.Cover with plastic and let it double in size.

  5. When double in size, “knock” down and knead for another 6 minutes.

  6. Work into 20 same size balls and place close together on a baking tray lined with paper.

  7. Cover and let it double in size again.

  8. Preheat the oven to 200 degrees.

  9. Combine all the ingredients for the cross paste, and place in a piping bag.

  10. When the buns have doubled size, pipe the cross over them and place in the oven and bake for 20min.

When the work is done sit down and indulge in the best HCB ever!
