These muffins are not really magic but my kids love how they put “green stuff” in and they come out chocolate.
40g brown sugar
30g rice malt syrup
2 tbs cacao
350g self raising flour
1 medium zucchini
Preheat oven to 160 and place muffin cases in muffin tins.
Blitz zucchini in food processor.
Add all remaining ingredients and mix until smooth.
Pour into prepared muffin cases.
Bake approx. 10-12 minutes or until a metal skewer comes out clean
