Mini Banana Bread


My kids love banana bread. One day I had no eggs, self-raising flour or buttermilk so I decided to experiment. I believe this recipe is even better than traditional banana bread ,and is great for kids with allergies to egg.


Thermomix Method

Prep 10 min // Cook 20 min mini loaves (40min large loaf)


INGREDIENTS

4 ripe bananas

130g butter softened

80g brown sugar

220g plain flour

½ tsp salt

1tsp bicarbonate soda

125g milk

1tsp cinnamon

1tsp nutmeg

2tsp vanilla extract


THERMOMIX METHOD

  1. Preheat oven to 180 degrees and lightly either mini loaf tin/large loaf pan.

  2. Add bananas to bowl and mash 4sec/sp5 and scrape down.

  3. Add butter and sugar and cream 20sec/sp4 and scrape down sides.

  4. Add all remaining ingredients and mix 20sec/sp 4.

  5. Pour into prepared tin and bake (20min mini loaf or 40min large loaf).

  6. Remove from oven and let sit for 25min.


Non-THERMOMIX METHOD

Prep 10 min // Cook 20 min small loafs (40 min large loaf)

4 ripe bananas

1/3 cup brown sugar

2 cups plain flour

½ tsp salt

1tsp bicarbonate soda

1 cup milk

1tsp cinnamon

1tsp nutmeg

2tsp vanilla extract


METHOD

  1. Preheat oven to 180 degrees and grease your tins.

  2. In a bowl mash your bananas well.

  3. Beat the bananas, butter and sugar well until they are light and creamy.

  4. Add all remaining ingredients and mix well.

  5. Pour into your prepared tins.

  6. Bake (20min for small loafs or 40min for large loaf).

  7. Remove from oven and let sit for 25min.
