Nan's Biscuits


I am sure everyone remembers the time when a tin of sweetened condensed milk was the secret ingredient in every kitchen.


During my childhood this humble tin was used in many baked goods I ate, including these cookies. While this recipe is not as healthy as some modern cookie recipes, the trend on providing a "treat" in a lunchbox is very real, and these sweet, buttery cookies (that you can freeze) are certainly a healthier treat than adding a processed item into your kids' lunchbox.


Prep 15 min // Cook 10 min


INGREDIENTS

500g unsalted butter softened

7 tbs raw sugar

395g tin sweetened condensed milk

4 x 1/2 cups self raising flour

Mixture of ingredients to flavour cookies - Cinnamon, ginger, choc chip, carob nibs, coconut, citrus zest, or jam - the possibilities are endless!


THERMOMIX METHOD

  1. Preheat oven to 180 degrees and line baking trays with baking paper.

  2. Place all the ingredients into a bowl and mix 10sec/sp6, scrape down sides. Repeat until a smooth cookie dough has formed and the butter has been mixed into dough.

  3. To make different flavour biscuits portion the dough into bowls and add the flarouring ingredient into the mix. (I did a mix of sultana biscuits, jam drop biscuits, coconut and lemon zest, and choc chip).

  4. Roll 1 tb of mix into a ball and place on the tray flattening slightly.

  5. Bake for 8 minutes and then cool on a wire rack.

Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees and line baking trays with baking paper.

  2. Place all ingredients into a bowl and either mix by hand or with a food processor that has a hook attachment until combined.

  3. To make different flavour biscuits portion the dough into bowls and add the flavouring ingredient into the mix. (I did a mix of sultana biscuits, jam drop biscuits, coconut and lemon zest, and choc chip).

  4. Roll 1 tb of mix into a ball and place on the tray flattening slightly.

  5. Bake for 8 minutes and then cool on a wire rack.
