No-Bake Apple & Date Muesli Slice


There is something awesome about "no-bake" slices. Cooking seems to be a more tedious process when you're waiting for items to be baked/cooked in oven. No-bake items seem to feel like they only takes seconds to make!


This slice takes slightly longer than "seconds" however with the use of a Thermomix or food processor this slice is chilling in the fridge within 10 minutes.


This slice freezes well, and depending on how big you make your slices, you will get at least 12 - 14 slices out of each batch!


Prep 10 min


INGREDIENTS

1 cup muesli (I used a muesli that had mixed fruit in it)

50g butter

1/2 cup dried apple

1/2 cup pitted dates

1/2 cup shredded coconut

1/2 cup coconut cream


THERMOMIX METHOD

  1. Place butter in bowl and melt 3min/37deg/sp2.

  2. Add all the remaining ingredients, mix 10sec/sp7, scrape down the sides then repeat until combined.

  3. Place the mixture into a slice tin that has been lined with baking paper and chill in the fridge for 1 hour.

  4. Cut into slices and store in an airtight container or freeze.


Non-THERMOMIX METHOD

  1. Melt butter in a saucepan over a low heat stirring continuously.

  2. Add butter and all the remaining ingredients into a food processor and mix until well combined.

  3. Place the mixture into a slice tin that has been lined with baking paper and chill in the fridge for 1 hour.

  4. Cut into slices and store in an airtight container or freeze.
