Pizza Pockets

This recipe works brilliantly with any type of pizza dough recipe you may have. But sometimes there just isn’t the time to make dough so we use two-ingredient dough instead.


Prep 10 min // Cook 15 min


INGREDIENTS

1 cup plain greek yoghurt

2 cup self-raising flour plus extra for kneading and rolling

20g Parmesan cheese

2 tablespoon butter and extra clove garlic

1 onion halved (diced for non-Thermomix Method)

2 cloves garlic

Handful of continental parsley (leaves only)

1 handful fresh basil (leaves only)

1 tablespoon oregano (dried is ok)

1 tablespoon thyme (dried is fine)


Pizza sauce


THERMOMIX METHOD

  1. Preheat Oven to 180 degrees.

  2. Place Parmesan cheese in bowl and chop 7sec/sp9 set aside.

  3. Place garlic, onion and herbs in bowl and chop 3sec/sp5 and set aside.

  4. Place yoghurt in bowl and mix 10sec/sp3 until combined.

  5. Knead 1.5 min until ball forms.

  6. Turn dough onto floured surface and divide into 10 even portions.

  7. Roll into a rectangle shape.

  8. Spread one side of the dough with pizza sauce, sprinkle onion/herb mix on and then your preferred toppings.

  9. Fold in half and pinch the end of the dough together

  10. Add extra garlic clove in bowl and chop 3sec/sp5 add butter and melt 2min/60deg/sp1.

  11. Brush top with some melted garlic butter and sprinkle reserved Parmesan on top

  12. Bake in a preheated oven at 180deg for 15min or until golden.

Non-THERMOMIX METHOD

  1. Preheat Oven to 180 degrees.

  2. Dice and chop all your remaining ingredients.

  3. Melt butter and add extra garlic to it to make a garlic butter.

  4. Place yoghurt and flour in a ball and mix with your hands until it forms a dough and then knead for 3 min. If you have a kitchen aid with a dough hook you can use that and then knead.

  5. Turn dough onto floured surface and divide into 10 even portions.

  6. Roll into a rectangle shape.

  7. Spread one side of the dough with pizza sauce, sprinkle onion/herb mix on and then your preferred toppings.

  8. Fold in half and pinch the end of the dough together.

  9. Brush top with some melted garlic butter and sprinkle reserved Parmesan on top.

  10. Bake in a preheated oven at 180deg for 15min or until golden.

  1. Ham, cheese.

  2. Ham, cheese, capsicum and mushroom.

  3. Salami, cheese, cherry tomatoes.

  4. Shredded chicken, garlic mayo, cheese.

  5. Tuna, cheese, onion.

  6. Mushroom, capsicum, olive.

  7. Chicken, spinach and feta.

  8. Leftover bolognese sauce and cheese.

  9. Shredded, chicken, capsicum and feta dip, cheese.
