Have you ever dared ask what your kids want for dinner (or in their lunchbox) and cringe when you realise you either don't have the time to make it, or worse, the ingredients needed are nowhere to be found in your home?
Recently this happened to me when the twins asked for mini pizzas in their lunches. I rarely don't have pre-made pizza dough (thanks Thermomix!), pizza bases or English muffins in the freezer. As Murphy's Law will dictate the one time I ask them on a school morning what would they like, they said "Pizza!" and my stash was empty!
Enter in pizza tarts. Thankfully I had some puff pastry in the freezer, and once I cut out some small squares and heated them up the air fryer we had "Mini Pizza" in minutes – and I must say they tasted great!
Since that fateful day I have learnt not to ask the twins what they want for lunch at 7.30am (when we need to be out the door at 8am) and yes, we have used this recipe EVEN with my trusty stash of pizza dough in the freezer!
Here are some topping ideas that are a hit in our house with the kids:
Troppo – Ham, cheese and pineapple.
BBQ Chicken – Roast chicken, cheese and BBQ sauce.
Veggie – Diced broccoli, mushroom and capsicum.
Italian – Leftover Bolognese sauce and cheese.
Prep 10 min // Cook 8 min (air fryer or 20 min oven)
Toppings of choice
Cut the puff pastry into 9 equal size squares.
Cover the pastry with pizza sauce.
Use you favourite pizza combinations and place on top (do not overfill the pastry and keep a clear border otherwise the pastry wont “puff”.
Cook in the air fryer for 5-10 minutes until puffed and golden.
For oven cooking cook for approx. 20 min.
