Plumilicious Muffins


You may have noticed that the majority of my muffins and slices contain fruit. There are two reasons for that. One is that it’s a healthier way to sweeten your baking, and secondly the twins LOVE fruit.


I love using seasonal fruit to keep our food bill down, and when I spied some red plums during a recent supermarket trip I decided to get some and create a few recipes for the upcoming school term.


While my kids love fruit, like most kids they love what they love, and sometimes it takes some cajoling to get them to try new fruit, particularly if it’s a new texture. They weren’t that interested in eating a whole plum, but when these muffins come out of the oven they ate two each and declared "We LOVE LOVE plums Mummy!" This is a great little trick for you all if you are having trouble getting kids to try seasonal fruit.


These muffins are quite dense because of the yogurt, so be sure not to over mix the batter!


Prep 10 min // Cook 15 min


INGREDIENTS

3 plums diced into bite size pieces

2 cups plain flour

2 tsp baking powder

½ cup brown sugar

2 eggs

½ cup milk

1 cup natural yogurt

1 tsp ground cinnamon

1 tsp vanilla essence


THERMOMIX METHOD

  1. Preheat oven to 180 degrees then lightly grease a muffin tin and set aside.

  2. Add eggs and milk to bowl then mix 5sec/sp4.

  3. Add flour, baking powder, cinnamon, sugar and vanilla to bowl then mix 7sec/sp6 and scrape down sides.

  4. Add yogurt then mix 5 sec/sp3 and scrape down sides.

  5. Add diced plums then mix 5sec/sp3/reverse.

  6. Pour into prepared muffin tins and bake for approximately 15 minutes or until cooked through.

Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees then lightly grease a muffin tin and set aside.

  2. Add eggs and milk to bowl then whisk until combined.

  3. Add flour, baking powder, cinnamon, sugar and vanilla to bowl then mix until combined.

  4. Add plums and yoghurt then gently fold through the batter until combined.

  5. Pour into prepared muffin tins and bake for approximately 15 minutes or until cooked through
