250g melted butter
1/4 cup brown sugar
2 tsp vanilla essence
2 cups plain flour
1tsp baking powder
1/2 teaspoon bicarbonate soda
Topping of choice - we used strawberries and blueberries in one slice and some choc chips in the other.
Preheat oven to 180 degrees and lightly grease 2 slice tins and line with baking paper.
Melt butter and then add sugar, eggs and vanilla and cream until the mix is light and fluffy.
Add remaining ingredients and beat until mixture is smooth.
Separate mixture into your 2 prepared slice tins and spread evenly and smooth over the top with a spatula or back of a spoon.
Add your toppings to the slice mixture and cook for 15 min until golden brown.
Add butter to bowl and melt 3min/37deg/sp3 scrape down sides.
Add sugar, eggs and vanilla and mix 10sec/sp4 and scrape down sides.
Add remaining ingredients and mix 10sec/sp4.
Place mixture in slice tins top with your topping and bake for 15 min.
This recipe will make 2 large slices and 40 pieces in total depending on the size you cut the slice and can be frozen ready for lunches if not eaten before it makes the freezer!!!
