Taco with a twist!

Who does not love Taco Tuesday? Sometimes in our house Taco Tuesday falls on another day of the week usually as a result of needing a quick and easy dinner or because one of the kids requests it.

Tacos became a big hit in our house as a result of someone who I love to call my "American daughter". Our longest serving au pair came to us as a 19 year old from North Carolina with one tiny secret - she was obsessed with Tacos! Soon after it became a favourite of my duo and now its called "Tara dinner".

Anyhow moving along from a trip down memory lane, yesterday (a Tuesday) I asked the duo what they wanted for dinner. One quickly shouted Tacos and the other Pasta! To keep peace in a house after 7 weeks being home I decided to combine the two and when it came to dinner declared here you go Taco Tuesday Twist!

I do not suggest you join dinner requests often, nor do I suggest you ask two kids with different tastes in food together what they would like for dinner as it is not going to end well at all. However, on this occasion the joined dinner turned out to taste fantastic and both kids got what they wanted - with a twist of course!

The recipe is quick and easy. I did make my own pasta (in ten minutes thanks to my Philips pasta maker) but store bough pasta is fine I am certainly not suggesting you roll up your sleeves and make pasta for this recipe! It tastes exactly like a taco wrapped around pasta. Its cheesey and gooey and the kids had 2 helpings so you know it must be a winner and the adults went back for seconds as well.

Teamed with a quick flat bread "garlic pizza" and we had the perfect and quick family Taco Tuesday and I did not have to chop all the usual accompaniments that go with traditional tacos.

So maybe next Tuesday get your Sombrero on and have Taco Tuesday Twist I promise you wont regret it!

Prep 5 min // Cook 20 min


1 onion diced

500g lean mince

3 cloves garlic crushed

1 packet of Taco Seasoning

3/4 cup water

1 jar of Taco Sauce

2 cups dried pasta

1 bag steam fresh peas, corn and carrot

1 cup grated cheese


  1. Fill saucepan with water and put on stove to boil.

  2. In a frying pan heat oil and saute garlic and onion for 2-3 min.

  3. Add mince and break up and brown for approx 5 min.

  4. Add taco seasoning and water and let simmer for 3 min.

  5. Add Taco sauce and vegetables and continue to simmer until the meat is cooked.

  6. When the water is boiling add pasta and cook until al dente.

  7. When the pasta is cooked add to the taco mix and mix through well.

  8. Add cheese and stir it through the pan to melt.

  9. Serve hot with flat bread garlic bread or on its own.
