The 2P's Muffins (Plum & Pear)



Plums and pears are not a usual combination for a muffin, and I will let you in on a secret. This recipe came about because of my hatred of food wastage.


I had plums and pears but not enough to make anything on their own, so I decided to add them together to see how they would taste.


It turns out that the combination is a thumbs up (and not a thumbs down). With the addition of a sprinkle of white chocolate chips, the twins thought they had hit the jackpot!


Prep 10 min // Cook 30 min


INGREDIENTS

400g diced plums and pears (or whatever you have available)

2 cups plain flour

2 tsp baking powder

½ cup brown sugar

1 tsp ground cinnamon

125g melted butter

¾ cup milk

2 eggs

1 tsp vanilla essence

Handful white chocolate chips (optional )


THERMOMIX METHOD

  1. Preheat oven to 180 degrees then lightly grease a large muffin tin and set aside.

  2. Add the butter and sugar to the bowl then cook 3min/37deg/sp3 and scrape down sides.

  3. Add milk, eggs and vanilla then mix 6sp/sp4 and scrape down sides.

  4. Add flour and baking powder then mix 6sec/sp5 and scrape down sides and repeat if needed.

  5. Add diced plums, pears and choc chips (if using ) and mix 5sec/sp3/reverse.

  6. Pour into the prepared trays and bake for approximately 30 minutes or until cooked through.

Non-THERMOMIX METHOD

  1. Preheat oven to 180 degrees then lightly grease a large muffin tin and set aside.

  2. Place the butter and sugar in saucepan and cook over a low heat until the butter has melted and sugar has dissolved - you don’t want a complete caramel just a nice glossy mix.

  3. Add butter, eggs, milk and vanilla to a bowl and mix well.

  4. Add flour and baking powder then mix well to combine.

  5. Add plums, pears and choc chips (if using) and fold in gently.

  6. Pour into the prepared trays and bake for approximately 30 minutes or until cooked through.
