Mac n Cheese the ultimate comfort food and kid friendly meal! I must admit when I first tasted "mac n cheese" I was not keen. I am not sure if it was due to the orange colour or the fact that I knew it had come out of a box - probably a little of both if I am honest.
I love good food. Most adults love good food, so I am always amazed at why people/companies think we would want to give our children "plastic" or processed food out of a box.
Cooking Mac n Cheese from scratch is not hard all we need is some pasta, cheese, butter, milk and flour and you will have a baseline dish. This still probably does not tempt the taste buds of many adults so lets pimp it up and modernise it with some beautiful Tuscan flavours and chicken and presto you have a great family meal!
Once you pimp it up up you have a meal you know your kids will love and you will enjoy as well and its ready in under 30 minutes!
And for those with school aged kids use the leftovers in a thermos or as shown above place some wraps in a muffin tin, spoon in some leftovers add some cheese and bake in the oven and you have mac n cheese cups for the lunchbox!

3 large chicken breasts
2 tsp EDMK Tuscan spice blend
2 tbs butter
1 onion diced finely
8 cloves garlic crushed
2 ½ cups cup chicken stock
2 tbs flour
3 cups milk
1 tsp EDMK Italian spice blend
1 cup cherry tomatoes quartered
3 cups uncooked macaroni (or any short pasta )
1 cup grated Parmesan Cheese
1 cup of either mozzarella, tasty or cheddar cheese (or a combination of all)
Cut the chicken into bite size pieces and drizzle with olive oil and then coat with the Tuscan spice blend.
Heat remaining oil in pan and sear the chicken in batches 1-2 minutes each side and remove to a plate and cover to keep warm.
Add butter to the pan and saute and onion and garlic until fragrant.
Place flour in pan and cook for 1 minute continuing to whisk so no lumps form.
Add broth, milk, Italian herb blend and season with salt and pepper. Bring to a low simmer.
Add macaroni and chicken and continue to stir while it cooks regularly.
After 8-9 minutes or the sauce has thickened take the pot off the stove and stir in the cheeses.
If you want the sauce to be a little runny add a small amount of milk at a time until you get your achieved consistency,
