Vanilla Choc Biscuits

The last day of holiday school, the twins had a teddy bear's picnic and had to bring a plate to share with their friends.


I had been busy in the kitchen and decided to be ultra organised. I made these biscuits and filled them with Nutella (as I had run out of ingredients to make a buttercream filling). As I filled the last biscuit thinking how clever I was, it dawned on me that Nutella is a no go zone in schools.


While I reverted back to the trusted fruit, cheese, dip, salami and popcorn share plate that I often do when the twins have friends over, my family enjoyed the buttery, crumbly, oozy Nutella biscuits.


This is a quick and easy recipe that is perfect for any occasion and you can fill the biscuits with anything you like!


Prep 10 min // Cook 15 min


INGREDIENTS

250g room temperature butter

1 tsp vanilla extract

80g cup icing sugar

225g plain flour

75g corn flour


THERMOMIX METHOD

  1. Preheat the oven to 160 degrees and line a baking tray with paper then set aside.

  2. Place the butter, vanilla and icing sugar in bowl and beat 20sec/sp4. Scrape down the sides and repeat until light and fluffy.

  3. Add both flours one cup at a time, and mix 10sec/sp4 after each addition of flour.

  4. Using a teaspoon, roll the mix into balls and place on the baking tray, then flatten slightly with the back of a fork. Repeat until the mixture is all used.

  5. Bake in the oven for 15 minutes and cool on a wire baking tray.

  6. Using a knife spread Nutella over the base of one biscuit and sandwich another one over the top.


Non-THERMOMIX METHOD

  1. Preheat the oven to 160 degrees and line a baking tray with paper then set aside.

  2. Place the butter, vanilla and icing sugar into a bowl and beat until light and fluffy.

  3. Add both flours one cup at a time, and beat on a low speed until mixed through.

  4. Using a teaspoon roll the mix into balls and place on the baking tray, then flatten slightly with the back of a fork. Repeat until the mixture is all used.

  5. Bake in the oven for 15 minutes and cool on a wire baking tray.

  6. Using a knife spread Nutella over the base of one biscuit and sandwich another one over the top.
